MADISON, WISCONSIN – The Cheese State. Cheese Heads. Yeah, yeah, yeah. Everyone makes fun of Wisconsin for its cheese. Well, guess what? The cheese is really good in Wisconsin. And if you deep fry it, it’s even better. It will change your life.
Here’s what you need to know about cheese curds. There’s two kinds. Fried and fresh. Fried cheese curds (shown in the picture above) are kind of like little lopsided balls that resemble mozzarella sticks. But WAY better. Fresh cheese curds are also called squeaky cheese curds because they literally squeak in your mouth when you chew. If they don’t squeak, then you’ve been jipped.
Where do you find these morsels of goodness? For fresh cheese curds, head to the Saturday morning Dane County Farmer’s Market on Madison’s capital square. (Farmer John’s are my favorite.) Purchase curds. Open bag. Eat immediately. For the fried version, beeline it to The Old Fashioned, also located on the capital square. Order curds. Dip in ranch. Eat immediately.
